Served hot or cold, an intense flavour hit to add to a green salad.

Can also be served as a relish with grilled steak or chicken at dinner, or enjoy as a Free Food snack with freshly ground black pepper.

Ingredients:

  • 4 Roma tomatoes
  • 1/2 cup of balsamic vinegar
  • 1 clove crushed garlic
  • Dried herbs (such as basil, oregano, thyme or rosemary)
  • Ground black pepper

Method:

  1. Add crushed garlic to 1/2 cup of balsamic vinegar and allow to sit for 5 minutes.
  2. Slice tomatoes lengthways into halves.
  3. Place on tray lined with baking paper.
  4. Use a pastry brush to cover tomatoes with balsamic vinegar and garlic mixture.
  5. Sprinkle with liberal amounts of mixed dried herbs or fresh herbs such as basil, oregano, thyme or rosemary.
  6. Place in moderately hot oven (180°C) and bake for 40-50 minutes.
