A traditional favourite with tons of flavour. Enjoy on its own as a free food snack or serve as an entrée to a main meal.

Ingredients

  • 10 Roma tomatoes, halved
  • 1 tablespoon fresh basil, torn
  • 1 tablespoon chopped fresh oregano
  • olive oil spray
  • 2 onions, diced
  • 2 cloves garlic, crushed
  • 1/4 cup tomato paste
  • 2 cups salt reduced chicken stock

Method

  1. Preheat oven to 200 degree C.
  2. Cut tomatoes into halves & place cut side up on an oven tray lined with baking paper.
  3. Lightly spray with oil and sprinkle with basil and oregano.
  4. Bake for 25 minutes, or until tomatoes are soft.
  5. Saute onions and garlic in a large non-stick pan until soft.
  6. Add roasted tomatoes, tomato paste and stock and simmer for 10 minutes.
  7. Puree tomato mixture until smooth.
  8. Reheat and serve.
