Dukkah and Coriander
Dukkah
Dukkah (or Duqqa) is an Egyptian mix of ground seeds, spices and nuts. The exact ingredients can vary but usually consists of sesame, coriander and cumin seeds, pepper and nuts like pine nuts, almonds and pistachios. As such, they are a crunchy source of healthy fats, protein and a powerful punch of flavour to your next dish. Remember with nuts this is part of your protein serve.
Find it in… the herbs and spices section of your local supermarket or at a Middle Eastern grocer.
Use a small sprinkle … as seasoning for meats, topping for salads or added to stir fries with garlic and reduced-salt soy sauce.
Coriander
Coriander (or cilantro) is a herb native to the Mediterranean region. You can eat the seeds (usually sold as dried or ground versions), roots, stems and leaves. They have a refreshing, slightly lemony aroma and taste like a blend of lemon and sage. Research has found this herb contains anti-bacterial properties and also contains vitamin C and some essential minerals. You can swap out coriander leaves/stems for parsley or dill, or coriander seeds for cumin or fennel seeds.
Find them in… the fresh herbs aisle of your local supermarket, or your local green grocers.
Use … leaves chopped and added to soups, scrambled eggs, curries and as a garnish for stir fries and sautéed mushrooms. Use seeds in seasonings, curries and dips.
