This Atlantic Salmon with Warm Potato & Bean Salad features perfectly cooked salmon paired with a hearty, warm salad of tender potatoes and fresh beans. A wholesome, flavourful dish that’s both nutritious and satisfying.

Ingredients

  • 600g Atlantic salmon
  • ¼ tsp salt (optional)
  • Freshly ground pepper
  • Spray olive oil
  • 8 chat potatoes, quartered
  • 500g green beans
  • 2 punnets grape tomatoes, halved
  • 1 Tbsp brown mustard seeds
  • 1 Tbsp olive oil
  • 1 Tbsp lemon juice
  • 2 tsp grated lemon rind
  • ¼ tsp salt, extra
  • 1 Tbsp white balsamic vinegar

Method

  1. Cut salmon into four even pieces, rub salt and pepper into the skin.
  2. Heat a non-stick frypan until hot, then lightly spray with olive oil. 
  3. Place the salmon skin-side down and cook for 5 minutes or until the skin is crisp. Turn over and allow to
    cook through. 
  4. Meanwhile, steam potatoes and beans in microwave until tender. 
  5. Combine cooked potato and beans in a large mixing bowl. Add tomato, mustard seeds, olive oil, lemon juice, lemon rind, salt and vinegar. Lightly mix to combine. 
  6. To serve, plate fish in the protein section of the Portion Control Disc Disc. Add the potato salad to the carbohydrate and vegetable sections.
  7. Serve with a tossed green salad if desired.
