This Fresh Tomato Pasta with Balsamic Chicken combines tender pasta with juicy tomatoes and tangy balsamic-marinated chicken. A simple yet flavourful dish that’s perfect for a weeknight dinner.

Ingredients

  • 2 lean chicken breasts (600g)
  • ¼ cup balsamic vinegar
  • 1 Tbsp olive oil
  • 300g fettuccine or spaghetti
  • Olive oil spray

Tomato Salsa

  • 6 large tomatoes, diced
  • 1 small red onion, finely diced
  • 1 lemon, zest and juice
  • Freshly ground black pepper
  • 1 cup fresh basil leaves, torn
  • 4 cups baby English spinach
  • ¼ cup kalamata olives

Method

  1. Cut each chicken breast into four lengthways.
  2. Combine the balsamic vinegar and half of the olive oil in a flat dish.
  3. Add chicken, allowing to marinate for two minutes on each side.
  4. Remove and set aside.
  5. Cook pasta according to the packet directions.
  6. While the pasta is cooking, prepare tomato salsa.
  7. In a large bowl, add tomato, onion, lemon zest, lemon juice and remaining olive oil.
  8. Season with pepper and stir to combine.
  9. Lightly spray a non-stick frypan with olive oil.
  10. Over a medium heat, cook the chicken for 2-3 minutes each side or until cooked through.
  11. To serve, mix tomato salsa through pasta.
  12. Add basil, spinach leaves and olives, lightly toss.
  13. Top with chicken and serve.
