A warming winter favourite.

Pumpkin is a versatile Free Food that you can enjoy as a snack at anytime, or serve as an entrée or side to a main meal.

Ingredients

  • 1/2 small pumpkin cubed
  • 1 brown or spanish onion, finely sliced
  • 1 clove garlic, crushed
  • 4 stalks of celery, chopped (you can include the leaves)
  • 1L water
  • Bunch of fresh parsley
  • Black pepper to taste

Method

  1. Saute onion, garlic and celery in a pot lightly sprayed with olive oil spray over medium heat until onion is translucent
  2. Add the pumpkin and fill with enough water to just cover the vegetables.
  3. Add half the parsley and cook till pumpkin is soft.
  4. Using a blender, pulp the mixture until smooth.
  5. Add the pepper and the rest of the parsley to taste and serve.
