Lamb with Asparagus Salad is a fresh and vibrant dish that pairs tender, juicy lamb with crisp asparagus and a zesty dressing. A light yet satisfying meal that’s perfect for any occasion.

Ingredients:

  • 150g lamb fillet(or loin or backstrap)
  • 1/2 lemon, sliced
  • Olive oil spray
  • 1 tablespoon balsamic vinegar
  • Black pepper
  • 1 bunch asparagus, trimmed, cut into thirds
  • 30g snow pea sprouts, trimmed
  • 1 small Lebanese cucumber, sliced
  • 1 tomato, cut into wedges
  • crusty bread roll, to serve

Method:

  1. Preheat oven to 200°C.
  2. Lightly spray a small baking dish with oil
  3. Place lamb in baking dish and arrange lemon slices on top
  4. Drizzle balsamic vinegar over top and season with black pepper
  5. Roast for 15mins
  6. Season chopped asparagus with pepper.
  7. Remove lamb from oven. Add asparagus to ovenproof dish.
  8. Return lamb and asparagus to oven for a further 10 minutes or until lamb is cooked to your liking.
  9. Remove lamb and cover with foil. Allow to rest for 5 minutes before slicing.
  10. Toss snow pea sprouts with the asparagus, top with sliced lamb and serve with cucumber/tomato salad and a bread roll.
